Who said our traditional galette des Rois can’t cross the borders of France? Certainly not Jamie Oliver. As part of his show Cook in 5 ingredients with Jamie Oliverairing this Sunday, January 15, in the Paris Premiere, the British star chef had the idea to revisit the famous dessert in a simplified but highly flavored version.

Galette des Rois made in less than 30 minutes with 5 ingredients

Called Almond Pastry, this recipe is exactly like the French galette des Rois, but it’s made in record time and with just five ingredients: puff pastry, almonds, heavy cream, sugared ice cream, and eggs. In addition to the speed of execution, it is therefore very economical. ” I want to wake up the baker in you, if only for half an hourJamie Oliver explains in the preamble to his recipe. In general, when you want to make dough, you need to prepare yourself, give yourself enough time, but not for this recipe. The great thing about cooking with five ingredients is that you can send it in just 30 minutes and the result will still be delicious. “.

We prefer whole almonds to ground almonds

But for the result to be truly amazing, there are a few secrets to know. The chef’s first tip? For almonds to be used to make frangipane, Jamie Oliver recommends opting for peeled and whole dried fruit. ” You can find it anywhere, and that’s even better “. If you don’t have a multipurpose robot to grind them, then you choose powdered almonds.” but no picture in terms of taste “.

Jamie Oliver’s secret to crispy pastry: powdered sugar

For the pastry, the chef advises that if you are short on time, you can buy it ready-made, it is best to buy it from your own baker, not from the supermarket. Replace the flour with parchment paper to go faster when rolling out the dough. ” Super practical, non-stick dough, extra time saving “says Jamie Oliver. And the chef has a trick to make the pastry dough crispy: he sprinkles powdered sugar on the parchment paper. ” This will add flavor to the dough “.

We cook galette des Rois at the bottom of the oven

Finally, one last tip: when putting the dessert in the oven, remember to put it at the very bottom of the oven so that the bottom of the galette is very crispy and the top rises well when baked.

Here’s Jamie Oliver’s almond shortbread recipe:

  • 375g full-fat pastry block (or 2 layers of pastry)
  • 100 g peeled and whole almonds
  • 1 tablespoon heavy cream
  • 75 g of powdered sugar + a little powdered sugar for the end
  • 2 eggs

Preheat the oven to 220°C (thermostat 7).
Blend the almonds in a food processor. Almonds are ground into powder, continue to mix and add cream, 75 g of powdered sugar and one egg.

Cut the dough block in half. Roughly knead both doughs to give them a rounder shape. Dust a long sheet of parchment paper with powdered sugar. Place a paste on the first half of the sheet. Cover with the second half. Roll out the dough to a thickness of 0.5 cm. Repeat for the second dough.

Place the first dough on the parchment paper. Spread the frangipane cream on top, leaving a 2cm gap before the edges. Put the second dough on top. Place a round plate on top of the galette and cut off the excess with a knife. Sprinkle powdered sugar on top of the cake. Quickly seal the edges with the back of a fork. Gently push your index finger into the center of the pancake without making holes in the batter. Cut small strips from the center outwards with a knife.

Brush with egg yolk.

Bake in the bottom of the oven (with parchment paper) for about 15 minutes.

You can let your imagination run wild for the designs on top of the cake. Flowers, leaves… Anything is possible.
