Here’s Jamie Oliver’s almond shortbread recipe:
- 375g full-fat pastry block (or 2 layers of pastry)
- 100 g peeled and whole almonds
- 1 tablespoon heavy cream
- 75 g of powdered sugar + a little powdered sugar for the end
- 2 eggs
Preheat the oven to 220°C (thermostat 7).
Blend the almonds in a food processor. Almonds are ground into powder, continue to mix and add cream, 75 g of powdered sugar and one egg.
