Galette des rois: a winter recipe
What is galette des rois as a cake?

Ingredients for 8 people:
500 g of homemade dough or 2 rolls of yogurt dough
2 Clementines
2 limousine golden apples
120 g of pitted Agen plums
1 cinnamon stick
2 star anise (star anise)
1 piece of vanilla pod
3 tablespoons ground almonds
2 tablespoons of lemon honey
1 tablespoon of orange blossom water
1 egg yolk
2 tablespoons of milk or water
Preparation and cooking
- Preheat the oven to 200°C (6/7).
- Peel the apples, remove the seeds and cut into cubes.
- Peel the clementines, separate the segments and cut them in half.
- Peel the plums and cut them into small pieces.
- Put these fruits in a pot with honey on low heat, add 2 tablespoons of water, spices and orange blossom. Leave in the heat for 20 minutes. Then cool. Add the crushed almonds and mix. Leave aside.
- Roll out a disk of puff pastry on parchment paper. Cover with thick fruit cream to place the beans on top.
- Moisten the edge of the paste with a brush. Then place the second disc on top of the folded dough. If rolled, set aside, pinch and roll all over. If there is too much water, the pastry will not stick and the fruit cream will come out during cooking.
- Cut the edge of the patty with a long, thin, pointed knife using the blunt side. Lightly make small slits all over the dough. Chiket allows the dough to rise more easily while baking and decorates it.
- Brush the surface with egg wash. Refrigerate for 15 minutes. Iron on a layer of gold.
- Using a toothpick, make a drawing on the dough, push the knife very slightly and make a small hole in the center and 3 other small holes along the drawings for steam to escape.
- Place in the oven and bake for 35 minutes, after 10 minutes lower the oven to 170°C. Watch the dough as it cooks so as not to spoil it.
